Classic Tomato Sandwich

Nothing beats a classic tomato sandwich with fresh tomatoes from your garden during the summertime. It’s simple, it’s classic, it’s delicious — I cannot get enough of these sandwiches.

Classic Tomato Sandwich

This time of year we always have an abundance of tomatoes in the vegetable garden. The last few years I’ve had to rescue the ripe ones from the bugs and the birds, so any prize that actually makes it inside unscathed is a true treasure.

When I pick my tomato plants for planting at the beginning of the season I always mix them up to include a variety of tomatoes because they all really do have such a special and distinct flavor. I am such a fan of Ugly Tomatoes and Heirlooms (of course), but as a lover of a Classic Tomato Sandwich I know the only tomato to use for this Summer staple is a Beefstake. The bigger and most bright red, the better.

For pretty styling purposes I went back and forth as to whether I should make this post a BLT, adding some bacon or greens to make the shot just a little better but finally decided against it to keep it true to Tomato Sandwich style.

Now, this is a simple one that really just takes some assembly but if you follow it to a tee then you’ll get that farm fresh flavor you’re looking for. A few keys aside from your tomato choice are the simplicity of using old-school white bread, seasoning with just a heavy sprinkle of kosher salt and cracked pepper, and of course a heavy spreading of Dukes Mayo on both sides of the bread.

Slathering both sides will give it a lot of tangy flavor, but will also keep the thick slices of tomatoes a bit more in place when you take a bite. And I always recommend this one that one special week or two when the flavor of the tomatoes are at their peek, because nothing truly beats the earthy tone at that moment.

Classic Tomato Sandwich

Description

This simple sandwich lets vine-ripened summer tomatoes be the star of the dish.

Ingredients

Scale
  • 4 slices of white bread
  • 1 large Beefsteak tomato
  • 24 TBSP Dukes Mayo (to taste)
  • Kosher Salt
  • Cracked Pepper

Instructions

  1. Slice tomato into medium-thick slices and set aside. Generously spread mayonnaise onto each slice of bread. Layer tomato slices onto a single slice of bread and sprinkle generously with salt and pepper, to taste. Add the final slice of bread on top to make your sandwich. Enjoy!

As you can see I had one of my little helper along to assemble these for lunch, as he’s home with me this week for “Camp Mama,” a Summer tradition I now plan to continue for as long as I possibly can.
