Southern Kitchen Bucket List : Homemade Mayo.
This post is part of our on-going Southern Kitchen Bucket List series, an attempt to try and master all the staple foods + recipes from a classic Southern kitchen. This recipe “how-to” for making homemade mayonnaise (aka mayo) elevates this go-to condiment to a whole other level.
In my opinion, mayo makes everything taste so much better. It adds the perfect amount of moisture and zing to sandwiches, and it’s something that I think tastes even better when it’s homemade. I was skeptical about trying this out, even after I got started, but trust me - once you make this on your own you’ll never want to buy it at the store again.
The best part about homemade mayo is that it can literally takes less than 5 minutes to make and you probably have all the ingredients on hand right this moment to pop in your kitchen and give it a try. And, my whole family can really taste the difference between the mayo I make at home and the kind I buy from the grocery store.
- 2 egg yolks
- 1 tablespoon mustard powder
- 1 tablespoon vinegar
- 1 tablespoon lemon juice
- 1 cup olive oil
How to cook Homemade Mayo.
- In a large bowl or wide-mouth mason jar, add olive oil, vinegar, egg yolks, mustard powder, and lemon juice.
- With a hand blender, mix ingredients together until the blend reaches a creamy consistency. This usually takes about 30 seconds.
- Spread this on your favorite sandwich bread and enjoy!
This mayo is perfect to add to egg salad, chicken salad, or on a BLT sandwich. I also discovered it makes an amazing aioli type dressing atop roasted Brussels sprouts, but more to come on that one later.
