Nostalgic Whoopie Pies

There is nothing quite as nostalgic as a classic Whoopie Pie. Its classic look and sweet taste can transport you back in time — even if you never actually had one as a kid.

There are some things that just scream childhood nostalgia and to me a Whoopie Pie is one of those things. Not because I grew up eating them, truth is I didn’t try my first one until I was a full fledged adult.

Maybe it’s the name, or perhaps the fluffy white frosting, but these fun desserts are just as much fun to make as they are to eat.

The Perfect Whoopie Pie

A few tips as I share the recipe below, I think they would be great with a dark cocoa powder, both for a beautiful dark color on the pies and also to cut down on the sweetness a bit. I also used a dark brown sugar for a richer flavor, but you can always use light brown sugar as well.

I honestly could not get enough of this pretty brown batter, as I’m always used to ad light, white batter in most of my recipes.

Nostalgic Whoopie Pies

Description

These whoopie pies are a blast to make and to eat. Their smooth, creamy filling and fluffy chocolatey pies are too good to resist.

Ingredients

For the Pies
  • 2 cups all purpose flour
  • 1/4 cup unsweetened cocoa powder
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp salt
  • 1 tsp pure vanilla extract
  • 1 cup milk
  • 1 cup dark brown sugar
  • 1/2 cup vegetable shortening
  • 1 egg
For the Filling
  • 2 cups of marshmallow fluff
  • 1 1/2 cups powdered sugar
  • 1 cup vegetable shortening
  • 1 tsp vanilla extract

Instructions

  1. Preheat oven to 350 degrees.
  2. In your stand mixer, combine sugar, shortening and egg and cream together with paddle attachment. Slowly add dry ingredients – flour, cocoa powder, baking powder, baking soda and salt – ensuring they are well mixed. Slowly add in milk and vanilla extract until the batter is well mixed.
  3. Onto greased baking pan add spoonfuls of batter to make each pie ensuring they are as level as possible for even baking and that you give enough space between each as they will spread slighting in the oven. Bake for 12-15 minutes.
  4. Remove pies from oven and allow them to cool completely on a wire baking rack.
  5. While pies are cooling, prepare filling by combining marshmallow fluff, powdered sugar and shortening in your stand mixer with whisk attachment. Add vanilla extract and mix until all ingredients are well combined.
  6. Assemble by taking one pie and spreading on a generous amount of filling. Take a second pie and press together to make a sandwich, continuing until all your pies are assembled. Enjoy!

The pretty texture of the marshmallow fluff was so fun and reminds me of my Grandmother. She always had a jug of it in her pantry for some reason, fudge perhaps? Her pantry was always stocked full of baking goods, able to make any and every recipe at a moments notice without going to the store. My Mom’s pantry, and mine, is the same today.
