The purpose of a pie bird is to vent a pie that may hold more liquid than others, such as a fruit or meat pie. They act as a little steam chimney for pushing out the excess moisture your pie may hold while baking, preventing too much liquid within and a soggy pie crust along the bottom of your pie. They can also be used to hold up your pie crust so it doesn't sag in the middle when you have an upper crust. And of course, they make a beautiful presentation when finished with the little bird peaking out of the top of your gorgeous pie.
