Entertaining ideas from your Farmhouse Garden.

As we come to the end of our Farmhouse Garden series I want to show you why all this hard work is worth it. Once your garden bloomed with fresh herbs and you were able to make some delicious recipes, like our Basil Pesto, now I want to show you some tips on entertaining in the comfort of your own home.

Roasted Okra.

Okra is a classic southern vegetable, and it makes a perfect go-to side dish. Personally, I like my okra more crispy than slimy, so roasting it is a wonderful way to go. Cutting it longwise also helps to give it a bit more crunch and feels like a good fry substitution.

It's so simple and tasty, you'll have a new favorite way to enjoy okra! Or, you can always go with the classic Fried Okra if you want to stay true to its roots.

ROASTED OKRA

  • Whole okra

  • Olive oil

  • Kosher Salt

  • Pepper

Cut okra lengthwise, drizzle olive oil and sprinkle salt and pepper. Heat oven to 400 degrees and bake your okra until it's browned to your liking. I tend to like mine crispier than most!

Snap Pea Spring Pasta with Asparagus and Parmesan.

One of my very favorite things about this time of year is simply shopping what's in season.

Driving by and grabbing a farm-fresh watermelon off the back of a truck or walking up to the farmers market in our neighborhood on Saturday morning to see what looks good and throw together a meal. When the ingredients are at their peak it's kind of hard to go wrong. 

Pasta is always an easy way to incorporate seasonal vegetables and with kids it's always a win. This recipe is quick and easy with just a few ingredients and is easily scaleable for a crowd.

ingredients for spring asparagus pasta / heirloomed

SNAP PEA SPRING PASTA WITH ASPARAGUS + PARMESAN

  • 1 lb fresh asparagus, chopped
  • 1 package angel hair pasta
  • 3 handfuls sugar snap peas, trimmed
  • 1/2 cup grated or shaved Parmigiano Reggiano cheese
  • 1/4 cup extra virgin olive oil
  • kosher salt + pepper to taste

Boil large pot of salted water and cook pasta until al dente, drain and set aside. In medium pot, chop and blanch asparagus until tender. Remove from pot and set aside, then blanch trimmed peas until tender.  Toss noodles in olive oil and toss in peas and asparagus. With tongs spin birds nest pile onto each plate. Drizzle with olive oil and salt and pepper to taste. Finish with a hearty sprinkling of parmesan on top. Enjoy!

Roasted Veggies.

Like many moms, I often struggle with getting my little ones to enjoy eating a variety of vegetables here at the house. That's why I love this recipe for roasted veggies - it's simple and turns everything from mushrooms to cauliflower into a delicious meal that even my kids will eat. 

And if there is something even better than getting your kids to eat their veggies, roasting vegetables is quick + easy too. That's like a win / win / win in my book. Here are a few of our favorites!

ROASTED BRUSSELS SPROUTS

  • Olive oil
  • Kosher salt
  • Shredded Parmesan reggiano

Heat oven to 375 degrees. Wash Brussels sprouts and trim off stems, cut into halves.  Drizzle olive oil and sprinkle kosher salt and a bit of parmesan on the clean Brussels sprouts. Roast in oven for approximately 30-40 minutes, and enjoy! I like mine super crispy (OK, nearly burned) so I tend to leave mine in on the longer side.

ROASTED CAULIFLOWER

  • Paprika
  • Cumin
  • Kosher Salt
  • Cayenne Powder
  • Garlic

Heat oven to 375 degrees. Drizzle olive oil on head of cauliflower - I like to use more for this because the head of cauliflower tends to soak it up more so than other veggies do. Trim the stem so that the cauliflower has a flat base to sit on. Sprinkle with spices to taste. Roast in oven for 30 minutes, and enjoy! You can also cut into slices, season as instructed, and make them on the grill or on a cookie sheet in the oven.

ROASTED MUSHROOMS

Kosher salt

Olive oil

Thyme (or your preferred herb)

Heat oven to 375 degrees. Add kosher salt, olive oil and thyme to sliced mushrooms. Roast for 30 minutes. I suggest adding these in with a grain or rice for a full meal!

Other favorite in our house is broccoli and for me I love roasted asparagus (though no one else over here has caught onto that one!) Love to know some of your favorite veggies to roast #HEIRLOOMED

Hearty Butternut Squash Bisque.

There is just something truly warming about soup this time of year. I was never one to make soup until I learned how truly quick + easy it can be. And, surprisingly for me, it's something the kids just love too - a total win/win especially when they get their daily vegetables in without even knowing it.

I teamed up with the fun folks at Pints and Plates for this recipe, and just like you'd pair a certain food with a fine wine, they are a wonderful resource when it comes to suggesting beer pairs for certain flavor profiles and recipes. 

I knew I wanted to go with something warm + hearty since it's fall and I had just been to the pumpkin patch up in the mountains filled with every variety of gourd and squash so it wasn't hard to land on this yummy recipe for Butternut Squash Bisque.

Butternut Squash Bisque

  • 1 tablespoon canola oil
  • 1 tablespoon unsalted butter
  • ½ cup diced onion
  • ¾ cup diced carrots
  • 4 cups butternut squash, peeled and cubed
  • 3 cups vegetable stock
  • ½ cup heavy cream (optional)
  • salt and pepper to taste
  • ground nutmeg to taste

Heat oil and melt butter in a large pot over medium heat. Stir onion into oil and butter and cook until tender.

Mix carrots and squash into the pot. Pour in vegetable stock and season with salt, pepper and nutmeg. Bring to a boil, reduce heat and simmer until vegetables are tender.

In a blender or food processor, puree the soup mixture until smooth. Return to pot and stir in heavy cream. Place pot back on stove and heat through, but do not boil. Serve warm with a dash of nutmeg.

Note: Crème fraîche and thyme make great garnishes as well.

Now as for beer pairing, they recommend a Bohemian Pilsner, like Pilsner Urquell and here's why: "The honey-like malt notes and the peppery snap in the hops of Pilsner Urquell® match the sweet, nutty flavor of the squash." I love the concept of these pairings and know you will love trying out the new recommendations too.
