Summer Canning 101 : Roasted Garlic Roma Tomato Sauce

This summer the tomatoes in my garden grew beautifully. With our summer season coming to an end I have been looking for a way to keep them stocked in my pantry all year long. Luckily I found the perfect recipe to keep that taste alive all winter by using canning. 

Canning + food preservation is one of those arts, especially here in the South. Today I'm teaming up with my friends at Ball Canning for a little “Canning 101” to show you how incredibly easy and fun it is to can yourself and capture all the flavors of summer in a little jar.

If you’ve never tried canning before, not to worry. I’m walking you through all the essential tools you’ll need and a step-by-step recipe for a delicious Tomato Sauce that I know your family can enjoy in these next few cold months.  I was pretty intimidated before I tried canning for the first time but once I read more about it and tried it for the first time I was hooked.

Before we get started, here is a quick list of tools you’ll need to begin canning :

ROASTED GARLIC ROMA TOMATO SAUCE

Makes about 3 (32 oz.) Quart Jars

Ingredients: 

  • 9-10 lbs. Roma style tomatoes, rinsed

  • 3 small whole heads of garlic

  • 2 medium onions, small diced (about 1 cup)

  • 1 tsp. olive oil

  • 1 tbsp. fresh oregano, minced

  • 2 tbsp. fresh basil, minced

  • 1 tsp. salt

  • 1/2 tsp. coarsely ground black pepper

  • Ball Citric Acid or bottled lemon juice

Instructions

Roast tomatoes, in batches, on a grill or under a broiler until skins begin to wrinkle and blacken slightly, turning to roast on all sides. Repeat with remaining tomatoes. Place finished tomatoes in a large bowl. 

Cover bowl of tomatoes tightly with plastic wrap. Let tomatoes steam and cool until they are easy to handle. Remove peel and core tomatoes. Slice each one in half and remove seeds; dice into 1-inch chunks. Place diced tomatoes, and any collected juices, into a large saucepan. 

Slice top portion of the heads of garlic, revealing the cloves below, drizzle 1 teaspoon olive oil over cloves in each head. Wrap garlic tightly in aluminum foil and place top side down on the grill with tomatoes; grill until soft, about 30 minutes. Or, roast in a 350 oven for 60 minutes. 

Prepare boiling water canner. Heat jars in simmering water until ready to use, do not boil. Wash lids in warm soapy water and set aside with bands. 

Remove roasted garlic by squeezing the softened heads of garlic allowing the cloves to pop out. Combine garlic, onions, herbs, salt and pepper with tomatoes. Cook over medium heat until heated through, stirring occasionally. 

Add 1/2 teaspoon citric acid or 2 tablespoons lemon juice to a hot jar; ladle hot sauce into hot jar leaving a 1/2 inch headspace. Remove air bubbles. Wipe jar rim. Center lid on jar and apply band, adjust to fingertip tight. Place jar in boiling water canner. Repeat until all jars are filled. 

Process jars 40 minutes, adjusting for altitude. Turn off heat, remove lid, let jars stand 5 minutes. Remove jars and cool 12-24 hours. Check lids for seal, they should not flex when center is pressed.

PRO TIP : Pay special attention to the instruction's required headspace measurement, this recipe calls for 1/2".

It really is so fun and easy to can in your own home. If you have any questions, you can always reference the “Canning 101” section on the Ball® website, it will show you a great step-by-step. Just make sure you keep everything sanitized to minimize any chance of compromising and not properly storing your filled jars.

Apple Buttermilk Skillet Cobbler.

After the best apple picking trip in the North Georgia mountains with my big guy Wyatt, we wanted to bring back our peck of apples and make something yummy for the family.

This recipe is one that we love from a cookbook that we're so into. The author, Brooke Bell passed the book, Cast Iron Baking along to me and I fell in love with this recipe. You know any book where I can cook with my cast iron skillet for each recipe is a win / win.

For as simple as this recipe is it's absolutely delicious and beautiful too. And trust me, it may seem like a lot of butter when you pour the batter in, but it all works out in the end. How's that for Southern cooking?

APPLE BUTTERMILK SKILLET COBBLER

  • 1/2 cup unsalted butter, cubed
  • 1 cup all-purpose flour
  • 2/3 cup granulated sugar
  • 1/3 cup firmly packed light brown sugar
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon kosher salt
  • 1 cup whole buttermilk
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon almond extract
  • 3 cups sliced Gala apple
  • 1 teaspoon ground cinnamon
  • Confectioners' sugar as garnish

Preheat oven 350 degrees. Place butter in a 10-inch cast iron skillet and place skillet in oven until butter is melted. Whisk together flour, granulated sugar, brown sugar, baking powder and salt, then stir in buttermilk and extracts. Pour flour mixture over melted butter in the skillet. In another bowl, toss together apple and cinnamon and scatter over flour mixture. Bake until lightly browned, 30 to 35 minutes. Garnish with confectioners' sugar if desired. Enjoy!

Fall Apple Picking.

It’s the time of year when our air gets crisp and the leaves start to turn. Growing up in Tallahassee we didn’t really have much in the way of a change of season so I really do appreciate the fall, even if it means colder weather is coming. I like to take this time to enjoy the weather outside and luckily living in south offers so many fun things to do.

I decided to make a special trip with my oldest son, just the two of us. We drove up to BJ Reece Apple Orchard, and boy did we have a great time. Apple picking season in Georgia starts the last week in August and lasts until the end of October so make sure to plan your trip during this time.

 After we finished our apple picking we headed to the main building to find some more goodies. They have so many varieties of apples, and a full section of fresh seasonal produce. But the best part is ALL the apple goods you can buy. They had everything from fresh apple hand-made pies, apple cider, bushels of apples, to apple chips, you name it - they’ve got it. My favorite treat ended up being, the apple cider sour cream donuts paired with a little styrofoam cup of hot apple cider. Fall is officially here and I couldn't be happier.

The BJ Reece Orchard has so many great varieties of Apples to choose from and they are best picked at certain dates. Here is a list from their website:

Not only did they have tons of apples to pick but they also have the cutest little petting zoo. We also got a chance to see a ton of fresh pumpkins and even passed a huge field of sunflowers too. We are so lucky to be so close to the North Georgia Mountains, there is so much to do in the great outdoors nearby us. We also visited Burt’s Pumpkin Patch while we were there, another huge farm operation that’s perfect for picking any kind of pumpkin or gourd you can imagine.

Now that we had all of these fresh apples, I couldn't wait to start on some great fall recipes. I made an Apple Buttermilk Skillet for dessert- and let me tell you, it was delicious. Wild Strawberry Shortcake.

Each year during the early Spring we try to make it down to Florida to enjoy the already-warm weather that I oh-so-miss in Atlanta that time of year. We hit up the beach for a day, catch a few Spring Training games and Disney for a day (because, #momlife) but my classic favorites include the Strawberry Festival in Plant City and taking the kids to pick fresh strawberries from the field.

This season I decided to incorporate sprawling springs of fresh mint from my garden (since there is SO much) and the outcome was so beautiful I just had to share. I really hope you’ll give this one a try – trust me, you’ll never go back!

WILD STRAWBERRY SHORTCAKE

 

Strawberry Topping :

  • 4 cups Strawberries, washed + quartered
  • 1-2 TBSP granulated sugar

Wash and quarter 4 cups of strawberries. Toss with 1 to 2 TBSP of granulated sugar and set aside.

 

Homemade Whipped Cream :

Shortcake :

  • 2 1/3 cups Bisquick
  • 1/2 cup milk
  • 3 TBSP granulated sugar
  • 3 TBSP melted butter

Heat oven to 425 degrees. In medium bowl, mix Bisquick, milk, sugar + melted butter until soft dough forms. Grease cookie sheet and drop six equal sized balls of dough. Bake 10 minutes until golden brown. Remove from baking sheet and serve while warm.

     

    To serve, place a single shortcake onto plate or bowl, top with two spoonfuls of strawberry topping and a dollop of fresh whipped cream. Garnish with mint, enjoy!

    Coconut Milk Cold Brew Coffee.

    If you happen to be a busy mom of three + an entrepreneur like myself then you know life is equal parts rewarding and chaos at any given moment. Treating myself and getting a kickstart in the morning always involves a big 'ole cup of coffee, no matter what.

    While we lived at the farm I didn't have the city conveniences of stopping by my local coffeeshop to grab a large cup. But it sure was peaceful waking up each morning with a wide open field out our front window and the little lake out the back. Pros + cons as they say. The other big "pro" was that I was forced to learn to make my own (good) coffee, not something I had mastered in the past. And, I even learned to enjoy a hearty cup of cold brew coffee, perfect for the hot summer mornings here in the South.

    I teamed up with my friends over at Chameleon Cold-Brew to bring you this simple + delicious recipe for Coconut Milk Cold Brew Coffee. While I have so many variations on this recipe (like using anything from almond milk to heavy cream as my mixer) this is my straightforward go-to most mornings when I'm enjoying cold brew.

    Coconut Milk Cold Brew Coffee

    In a large cup, pour 1 cup of cold brew coffee and mix in 1/2 cup ice cold water, stir together. Remember, this comes as a concentrate so mixing in equal parts coffee concentrate and liquid will ensure the perfect drink. Add 1" frozen ice cube to your cup and pour over the 1/2 cup coconut milk. You can leave it your milk on top or stir in if you prefer. Sip and enjoy!

    To say this is super simple is an understatement but the flavor and richness of the cold brew coffee is so, so good. And, you don't have to waste your time with the overnight process of making your own cold brew. You know I'm a fan of homemade but when the taste isn't any different and it's so much easier + more convenient than I'd rather save my time here and put it into making a homemade biscuit to go with coffee if you know what I mean.

    The other great thing I love about Chameleon Cold-Brew is the flavor choices. I'm a go-to on Vanilla usually but for some reason I gave the mocha a try and I'm so glad I did. It is so rich in flavor and really blends so well with the coconut flavor in the milk. Cold brew is also much less acidic which is great all around for your teeth, health and flavor profile of your coffee. A win/win/win.
