If you happen to be a busy mom of three + an entrepreneur like myself then you know life is equal parts rewarding and chaos at any given moment. Treating myself and getting a kickstart in the morning always involves a big 'ole cup of coffee, no matter what.

While we lived at the farm I didn't have the city conveniences of stopping by my local coffeeshop to grab a large cup. But it sure was peaceful waking up each morning with a wide open field out our front window and the little lake out the back. Pros + cons as they say. The other big "pro" was that I was forced to learn to make my own (good) coffee, not something I had mastered in the past. And, I even learned to enjoy a hearty cup of cold brew coffee, perfect for the hot summer mornings here in the South.

I teamed up with my friends over at Chameleon Cold-Brew to bring you this simple + delicious recipe for Coconut Milk Cold Brew Coffee. While I have so many variations on this recipe (like using anything from almond milk to heavy cream as my mixer) this is my straightforward go-to most mornings when I'm enjoying cold brew.

Coconut Milk Cold Brew Coffee

In a large cup, pour 1 cup of cold brew coffee and mix in 1/2 cup ice cold water, stir together. Remember, this comes as a concentrate so mixing in equal parts coffee concentrate and liquid will ensure the perfect drink. Add 1" frozen ice cube to your cup and pour over the 1/2 cup coconut milk. You can leave it your milk on top or stir in if you prefer. Sip and enjoy!

To say this is super simple is an understatement but the flavor and richness of the cold brew coffee is so, so good. And, you don't have to waste your time with the overnight process of making your own cold brew. You know I'm a fan of homemade but when the taste isn't any different and it's so much easier + more convenient than I'd rather save my time here and put it into making a homemade biscuit to go with coffee if you know what I mean.

The other great thing I love about Chameleon Cold-Brew is the flavor choices. I'm a go-to on Vanilla usually but for some reason I gave the mocha a try and I'm so glad I did. It is so rich in flavor and really blends so well with the coconut flavor in the milk. Cold brew is also much less acidic which is great all around for your teeth, health and flavor profile of your coffee. A win/win/win.

Homemade French Hot Cocoa.

There is nothing that quite brings you back to your childhood like a hot cup of cocoa + marshmallows. There is just something so nostalgic, warming and whimsical about sipping by the fire in a large, cozy mug.

Today I'm sharing a special French version that comes out thicker than the little envelopes you're used to. Hope you'll give it a try - it's great for caroling or enjoying as a Christmas Eve tradition. And, it's a perfect treat for Santa too.

  • 1 1/2 cups whole milk
  • 1/2 cup heavy cream
  • 2 teaspoons powdered sugar
  • 1/2 teaspoon espresso powder (optional, but delicious for intensifying chocolate flavor)
  • 8 ounces bittersweet chocolate, at least 70%, chopped

In a medium saucepan over medium heat, whisk together the whole milk, heavy cream, powdered sugar, and espresso powder until small bubbles appear around the edges. Do not allow the mixture to boil. Remove from saucepan from the heat and stir in the chopped chocolate until melted, returning the sauce to low heat if needed for the chocolate to melt completely. Serve warm, topped off with whipped cream or marshmallows.
