Summer Salad Jars.

A simple + fun idea for serving up your summer salad in a jar, with layers of ingredients and the dressing all-in-one. Shake the jar and you’ve got a delicious lunch, a perfect portable meal on-the-go, for a picnic or taking to eat at your desk at the office.

If you know me by now, you know I have a thing for jars. When I was little, I loved playing in my grandmother's pantry because she kept nothing in it's original packaging but instead transferred everything to be stored into various sized glass jars. So, when I discovered salad jars, it pretty much changed the salad game for me. 

As a mom of three, I am always looking for ways to make meal times simpler. This salad jar recipe allows me to grab a quick lunch while still being able to get all my greens in. The ingredients store so well in a classic glass jar, and their portability allows you to simply open your fridge, grab it, and go. And the best part is that everyone can add layers of the toppings they love the most so everyone gets what they want.

What I love about this concept, is that you can add just about anything you have lying around in your pantry/fridge. I always try to include a seasonal fruit or vegetable, nuts/seeds, and a protein such as black beans or grilled chicken. Another idea would be to include a hearty grain such as quinoa or farrow. For this particular jar, I used arugula as my greens and added in hard-boiled eggs, bacon, blueberries, mozzarella and sunflower seeds. I also love to top mine off with my classic salad dressing.

Classic BLT Sandwich.

This simple, but delicious sandwich is a summer staple that you will want to eat again and again. Three simple ingredients - bacon, lettuce and tomato - but yet so elevated and full of flavor. We used homemade mayo and that helped really make it the best sandwich ever.

This time of year there is always an abundance of beautiful summer tomatoes in my garden, and one of my favorite things to do with them is to make a BLT. To me, the perfect BLT has to have the perfect tomato, it’s the hero of the sandwich.

I start the assembly process by sprinkling my garden-ripe tomato slices with sea salt and cracked black pepper and placing them on top of lightly toasted bread that has been slathered with my homemade mayo. I was skeptical about this one, but it was totally worth it. If you’re not up for the challenge then I always recommend Dukes Mayo, just a personal preference but it’s a Southern staple and full of tang which I love.

I add crispy bacon (I use turkey bacon but the rest of my family and everyone everywhere else, prefers regular) and a handful of peppery arugula to take it to the next level.

This simple but classic sandwich highlights the perfect summer tomato.

ingredients:

  • 1 pound good-quality bacon
  • 3 large beefsteak or heirloom tomatoes
  • Salt and pepper, to taste
  • Arugula 
  • 1/3 cup of homemade mayo
  • 8 pieces of good-quality white bread

instructions:

How to cook BLT

  1. Preheat oven to 375°. Place the bacon strips in a single layer on a foil-lined sheet tray. Bake the bacon until just crisp, about 8 to 10 minutes.
  2.  Meanwhile, sprinkle the tomato slices with salt and pepper and transfer to a paper towel to drain.
  3.  Toast slices of bread and set aside until ready to assemble sandwiches
  4. When the bacon is ready, transfer it to a paper towel-lined plate to drain. 
  5.  To assemble, spread a thick layer of  mayonnaise on the bread, then layer the tomatoes, bacon, and arugula and top with remaining slices of bread. Slice the sandwich in half or in triangles and serve. Enjoy!

I love the simplicity of this sandwich. Another tip is that slathering both sides with the mayo will give it a lot of tangy flavor, but will also keep the thick slices of tomatoes a bit more in place when you take a bite.
