Low Country Boil.

Originating in the beautiful South Carolina Low Country, this seafood dish is a combination of shrimp, sausage, corn, and potatoes. A seafood boil is also tied to Louisiana, often with more spice and crawfish, while the further east coast variety may tend to be a bit milder and involve more shrimp. I love a good Low Country Boil because it is so easy for a big crowd of people, and makes a great beach vacation dinner with a fresh catch right off the boat.

A spread of Low Country Boil is typically served right on top of a layer of the local newspaper with a side of cocktail sauce if you please. It is also great with a little melted butter and hot sauce.

Whatever sauce you choose, keep in mind that this recipe can be a bit messy — I stand by using newspaper to line the tables and for you to go with the freshest seafood option you can get.

Try this simple and delicious one-pot meal originating from the South Carolina coast.

ingredients:

  • 1/2 cup shrimp and crab boil seasoning (such as Old Bay)
  • 4 pounds medium red potatoes
  • 2 1/2 pounds cured, smoked pork sausage links, cut into 3-inch pieces
  • 8 ears of corn, cut in half
  • 4 pounds medium shrimp

  1. Fill a 7-gallon stockpot halfway with water (or use 2 large pots and divide the ingredients between them). Add the seasoning and bring to a rolling boil. Add the whole potatoes to the pot. Allow the water to return to a boil and cook 5 minutes. Add the sausage. Bring the water back to a boil and cook 15 minutes. Add the corn, bring the water back to a boil and cook 10 minutes, or until the potatoes are done.
  2. Add the shrimp, bring the water back to a boil and cook until the shrimp turn pink, about 3 minutes. Drain through a colander; discard the liquid. Serve.

Picnic-Perfect Potato Salad.

Here in the South we are known for our "salads" when entertaining. Egg salad, tuna salad, potato salad and beyond. These mayo-filled bowls of mush are often associated with picnics and ladies luncheons alike, but I'm here to tell you that not all of us grew up on these varieties. 

Though I love a good dish with mayo, this chunky version of potato salad is the perfect blend of tang, mustard a whole lot of herbs makes it so full of flavor and a gorgeous presentation to boot.

This is one of those recipes where you can substitute 'til your hearts desire. Try a different kind of mustard or variation of vinegar, or toss in just about whatever fresh herbs you have growing at the moment.

The key to me is going heavy on the herbs, super chunky on the potatoes for a rustic, hearty dish and adding a tad more mustard than you're used to. This one gets better the longer it sits too so it's perfect when stored in the refrigerator and served the next day too.

Our twist on the classic potato salad recipe is the perfect side dish to entertain your guests with or to serve your family.

ingredients:

  • 3 lbs Honey Gold Potatoes, boiled and halved
  • 3 TBSP apple cider vinegar
  • 4 tsp whole grain mustard
  • 1 tsp mustard seeds
  • 1/2 cup extra virgin olive oil
  • 1 bunch fresh green onions
  • 1 bunch fresh dill
  • 1 bunch flat leaf Italian parsley
  • 3-4 whole brown eggs, soft boiled
  • kosher salt + cracked pepper to taste

instructions:

How to cook Potato Salad

  1. In a large saucepan, salt and boil potatoes until tender. Drain and set aside to cool.
  2. In a small saucepan, salt and boil eggs until soft boiled. Drain and set aside in ice water bath to cool.
  3. In a large bowl, whisk together vinegar, mustard and mustard seed, gradually adding in olive oil until emulsified. Halve the cooled potatoes and add to the vinaigrette and toss.
  4. Rough chop herbs (parsley, dill and green onions) and toss into potato mixture. 
  5. Halve or rough chop eggs for garnish. Salt and pepper to taste. Enjoy!
