Making Meringue.

I grew up in North Florida, the most wonderful place, but also where the summers are hot and sticky and buggy. Sometimes your most nostalgic memories come from the simple place of scarcity. 

Early fall and early spring were the best times for making what could be my all-time favorite dessert - meringue.

Meringue

This light, sweet dessert goes perfectly with fresh fruit.

ingredients:

  • 3 egg whites
  • 1 tsp vanilla
  • 1/4 tsp cream of tartar
  • 1 cup sugar

instructions:

How to cook Meringue

  1. Using a stand mixer, start with egg whites at room temperature and mix in vanilla, cream of tartar and a dash of salt. Begin beating to a soft peak and gradually add sugar, beating until very stiff peaks form and the sugar is dissolved. The meringue will be glossy.
  2. Cover your baking sheet with plain ungreased brown paper. Using a 9-inch round cake pan as a guide, draw circles on your paper. Spread meringue evenly over the circles. Using the back of your spoon, begin shaping into shells. The bottom should be about 1/2 inch thick and the sides about 1 3/4 inches high.
  3. Bake at 275 degrees for about an hour. keeping the over door shut, turn off the heat and let them dry in the oven for at least two hours. Goes great paired with fresh fruit. This recipe will make about 8 servings.

Made-from-Scratch Marshmallows.

While you're getting all set for hot cocoa, pull out all the homemade goodness with these sweet homemade marshmallows. These are such a special treat with a made-from-scratch touch and make a good food gift for the holidays too.

This was my first time attempting marshmallows from scratch, and it was a ton of fun (but also super sticky!) You can be the judge of if these are better than everyday marshmallows taste wise, but they're certainly much cuter! I used a biscuit cutter to cut each marshmallow, and they fit perfectly in a big cocoa mug. My only wish is that they turned out thicker, but these are still so much fun for the holidays. Love to hear how yours turn out!

Made-from-Scratch Marshmallows

These quick and easy treats add such a special touch to your holiday hot cocoa.

ingredients:

For the Marshmallows
  • 3 Tbsp gelatin
  • 1/3 C cold water
  • 3 C sugar
  • 1 1/2 C water
  • 1 1/2 tsp vanilla
  • 1/3 C cornstarch
  • 1/3 C powdered sugar

instructions:

How to cook Made-from-Scratch Marshmallows

  1. Soak the gelatin in the 1/3 of a cup of cold water in a small bowl and set aside to swell for 10 minutes. In a large saucepan dissolve the sugar in the 1 1/2 C of water over low heat, stirring constantly. Add the swollen gelatin and dissolve. Raise the temperature and bring to a boil. Boil steadily, but not vigorously, for 15 minutes without stirring. Remove from the heat and allow to cool until lukewarm. Pour into a stand mixer and add the vanilla and beat the mixture until very thick and white. Spray a 9x13 pan (or 9x9 inch pan for taller marshmallows) with bakers joy and let set Cut into squares and dust with a mixture of cornstarch and icing sugar.
