Southern Kitchen Bucket List : Day Pickles.

One of our favorite things to make is a stock pile of pickled vegetables straight from the garden, and it's something everyone in our family loves (especially the kiddos!) which is always a plus.

I grew up with a simple + fresh pickled cucumbers recipe, simply white vinegar, water, sliced cucumbers, salt + pepper and ice cubes. But, I learned this recipe from our friend Wayne at WoodKith and it's my new favorite.

Day Pickles

These quick pickles are the perfect way to utilize your summer garden haul.

ingredients:

  • 2 parts white vinegar / 1 part water
  • rather thinly sliced cucumbers w/ skin on
  • sliced celery
  • cubed small spring onions
  • sliced green tomatoes
  • sliced + seeded jalapeno
  • sliced radish
  • onion flower + dill flower + parsley flower
  • salt + pepper to taste
  • ice cubes

instructions:

How to cook Day Pickles

  1. Gather all ingredients.
  2. Make a brine by combining the water, vinegar, and salt and bringing them to a boil.
  3. Pack two clean glass pint jars with the vegetables. Add the rest of the ingredients. Pack the vegetables in tightly - you don't want them to float when you add the brine.
  4. Pour the hot brine over the other ingredients. The vegetables should be completely immersed in the brine. Since these refrigerator pickles will not be canned, it is not necessary to leave head space between the surface of the food and the rims of the jars.
  5. Fasten lids and store in the refrigerator for at least 24 hours before eating.

The "recipe" is super flexible and you can toss in whatever fresh veggies you have on hand. The secret flavor to this recipe is in the herbs, and the most important part to either recipe (in my opinion) is the ice cubes to make the veggies super crisp and crunchy.

If you know me by now you know my "recipes" are just that but this one truly is trial and error to your personal taste, and to whatever you have in your garden at the moment. For example, I don't love spicy so I don't eat the jalapeno but I do still include it because it adds a great flavor and subtle kick to the batch.

Buttermilk Pancakes.

The weekends are great for many things, but I must say one of my favorite parts is waking up on a Saturday morning to make breakfast with my family. It’s so nice not being rushed and teaching my kids how to make some of my favorite recipes. One of our family favorites is Pancakes - if they want something sweet, it’s ALWAYS what they choose.

Pancakes is one of the easiest things to make from scratch, and you can add toppings so easily, making it a meal that easy for everyone to enjoy. My Mom always makes fun letters and shapes for the kids, I’m not quite as talented so I keep that classic circle shape, much to their dismay.

Buttermilk Pancakes

These delicious, fluffy Buttermilk Pancakes are the perfect breakfast recipe for a Saturday morning.

ingredients:

  • 1 1⁄4 cup all-purpose flour
  • 1⁄4 cup granulated sugar
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 pinch of kosher salt
  • 1⁄4 cup buttermilk
  • 1 egg
  • 1⁄4 cup oil
  • Topping of your choice : blueberries, butter, whip cream, syrup, etc

instructions:

How to cook Buttermilk Pancakes

  1. Start by preheating your skillet or griddle, on about medium heat to get it warmed up. 
  2. Mix the flour, sugar, baking powder, baking soda, salt, buttermilk, egg, and oil until combined, in a medium mixing bowl.
  3. Grease your skillet or griddle with a few pats of butter to avoid sticking. Pour about 1/4 cup of batter onto the surface for each pancake. Cook each pancake for about 1 minute or until the batter starts to set around edges and little bubbles or pockets begin to appear on the “raw” side of the pancake. 
  4. Flip and cook for about 1 minute or until you see the pancakes are browned on the other side and cooked through. 
  5. Repeat with the remaining batter.

Fresh Syrup over Pancakes by heirloomed

This recipe gives you such nice and fluffy pancakes. We like to add different topping like blueberries or strawberries, but you can really add anything - chocolate chips, nuts, Nutella, you name it.
